It is a classic breakfast/snack that is very common in Colombia, particularly in Bogota. It consists of homemade Colombian hot&lt;br/&gt;
chocolate that is served with cheese, which is actually placed in the hot chocolate, so that you get the delicious melted cheese with the chocolately goodness, I promise its delicious. For those unfamiliar with this delicious porridge like beverage, it is a Mexican chocolate drink, very common during the holidays and often accompanied by tamales. It is comparable to a thick hot chocolate, and recipes can vary. Its consistency is achieved with corn masa or more simply with corn starch. It is then combined with milk, cinnamon and Mexican chocolate tablets. Nothing spells out the holidays for me then coquito. It’s a puerto rican version of eggnog, it’s made with rum and I must say it’s better then egg nog. I grew up with it ( the virgin version ofcourse :)) and it is the best holiday drink out there hands down. It is made with fresh coconut, coconut creme, condensed milk, evaporated milk, cinnamon, cloves, sometimes eggs, and ofcourse white rum. It is obviously a diet friendly drink :). But seriously it’s the holidays, let loose a little and have some coquito!!!
